Here are some low-gluten ideas I've successfully dehydrated and used on the trail:
minestrone soup - really filling with all those legumes and vegies
red lentil soup (red lentils, tomato soup, coconut cream + spices) - I also use this as a vegetarian bolognaise if made very thick
vege soup, mainly blended with small chunks
Rice and lentils - use different spices to change the flavour, eg. indian, thai, morrocan, etc. - add different vegies
Cous cous is great but I don't know if a low gluten variety exists
dehy dips - hummus, tahini, beetroot dip, eggplant dip
Tropical fruit and rice pudding for dessert
